BREADED PHEASANT BREAST
Ingredients:
2-6 Pheasant breasts
Bread crumbs
Mayonaise
2-3 eggs
Salt and Pepper to tatse
Directions:
Clean the breasts of any fat
Submerge them in salt water for 2-6 hours in the fridge
Prepare two bowls
Bowl One- Scramble your eggs and add a tbsp of Mayo - stir it up good!
Bowl Two- fill the bowl up with your bread crumbs and add salt and pepper - maybe some crushed red pepper if you're feeling spicy
Dip one breast at a time in the egg wash, let it drip excess goo, then toss it in the bread crumbs
Cover the breast with bread crumbs and place on a greased cookie tray
Continue with each breast
Throw the breasts in the preheated over at 350
They don't take long, maybe 10-15 minutes. This is an eye ball, I sometimes over cooke mine
