Breaded Pheasant Breast

Ingredients:
- 2-6 Pheasant breasts
- Bread crumbs
- Mayonaise
- 2-3 eggs
- Salt and Pepper to tatse
Directions:
- Clean the breasts of any fat
- Submerge them in salt water for 2-6 hours in the fridge
- Prepare two bowls
- Bowl One- Scramble your eggs and add a tbsp of Mayo - stir it up good!
- Bowl Two- fill the bowl up with your bread crumbs and add salt and pepper - maybe some crushed red pepper if you're feeling spicy
- Dip one breast at a time in the egg wash, let it drip excess goo, then toss it in the bread crumbs
- Cover the breast with bread crumbs and place on a greased cookie tray
- Continue with each breast
- Throw the breasts in the preheated over at 350
- They don't take long, maybe 10-15 minutes. This is an eye ball, I sometimes over cooke mine
