Hank's Southern Duck Purlow


3 Whole, Plucked (Wood Ducks and Teal work best)

1lb of Rice

1lb of Smoked Sausage

1 Whole Onion

Cajun Seasoning to Taste


Hank says: Boil the ducks in enough water to cover them, you may need to add more water as you go. This process is 2-3 hours or until they're tender enough to debone easily. Add your rice, diced onion, cajun seasoning, and diced up smoked sausage. Bring the whole thing back to boil, then simmer. Stir occasionally to prevent the bottom from burning. The meal is done when the rice is fully cooked. He said this feeds many people!
